Organic re-milled durum wheat semolina “Senatore Cappelli” variety, born, raised and milled in Puglia.
The "Senatore Cappelli" was born in Puglia in the early 1900s, to date it retains its organoleptic properties intact, has not been genetically modified (no GMO) and lends itself well to organic cultivation because it is a resistant and adaptable cultivar.
Naturally rich in amino acids, lipids, minerals, B vitamins, it has a high protein content and a high digestibility that make it a very high quality grain. Wholemeal re-milled semolina is perfect to accentuate the rustic taste of your dishes: from fried food to focaccia; from bread to pasta, from taralli to pizzas.
It is richer in nutrients and fiber because it also preserves the germ and bran of the wheat grain, ground in its entirety. You can use it alone or mix it with re-milled semolina. Tenacious and fragrant, with an intense taste, it immediately brings back to the flavors of the past.
